WThis is a home-style interpretation of a drink featured on the seasonal drinks list. This is a large-volume prepared mix that is packed with tastes of the Christmas time, which makes it ideal for a celebration. Reserve the remaining citrus syrup to use in morning drinks, sweets, or for more rounds of bikinis.
Serves 10 people
300ml recently pressed clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
400ml good quality vodka
100ml dry gin
150ml peach liqueur
200ml citrus syrup (from the recipe above)
Whole cranberries, as a garnish
Mandarin essential oil, to finish
Making the Syrup: Place every items inside a pan, bring to a simmer, stirring so the sugar melts. Next, take off the heat and leave to cool completely. Decant to a clean bottle, seal and store in the fridge, it can be stored for around four weeks.
To make Cocktail Base: Combine all the spirits and syrup into a big jug, leave to sit for an hour, then strain preferably using a fine cloth, making it perfectly clear.
When ready to serve: Add 85ml of the batch mix into a mixing glass filled with ice, gently stirring carefully for a minute until cold. Strain to a cold coupe glass or similar, decorate with the cranberries and complete it by giving it a brief mist of mandarin oil above the glass.
